Business Description
We are Braid Bakery, an LLC specializing in high-quality sweet and savory babkas. We operate out of a commercial kitchen in San Francisco with a lease that can be continued. We have a strong brand identity and a loyal customer base, with 1,500 historical customers (does not include customers at pop-ups) and a newsletter open rate of 67% and 49% subscription rate (those metrics are way above average). Our brand has been mentioned in publications like SF Eater, Secret San Francisco, and we have a 4.9-star rating on Google Maps. Our brand is high quality, as shown by our rapid expansion on Instagram (https://www.instagram.com/braid.bakery/).

We currently operate through a combination of pop-ups, private events, catering, and wholesale, with a notable focus on special events like mitzvahs. Our primary revenue stream is currently captured on weekends, through pop-ups and special events (mitzvahs, weddings).

Operations

Baking: Baking is done in a shared commercial kitchen in Potrero Hill / Dogpatch.
Staffing: We have 4 contractors who work on pop-ups. They have been very easy to hire.
Permits: We have transferable catering license.
Documentation: All of our recipes are documented, and we have onboarding documents for sales contractors.
Financials: All taxes have been paid, all expenses are logged on Quickbooks.

Growth Potential

We have significant growth potential. Key growth levers include:
Hiring and Partnerships: The main lever for growth is hiring and partnerships, as we sell out at all pop-ups.
Events: There is significant potential to expand by working with more event planners to secure additional contracts for weddings and other events.
Weekday Offerings / Catering: Expanding weekday offerings, such as catering, is a major growth opportunity, as most of our current revenue is captured on weekends.
Delivery Apps: Joining delivery apps like EZCater and Forkable is a possibility for increasing revenue.

Current Partnerships

Pop-ups: Rare Device, La Fromagerie (Union St), Sealevel, Fellow Coffee, Picky Monday, Morning Tide, Bird and Bear, Highlow Larder
Sport clubs: Midnight runners, Fatcake cycling, Marina Run Club
Events: West Coast Craft, Renegade Festival, Cole Valley Fair, Sunset Mercantile, Secondhand Saturday, Inner Sunset Flea Market, Castro Night Market, French Gastronomy Festival, Bastille Day event.
Wholesale: Other Avenues
Catering: LiveRamp, Rippling, Chotto Matte. This is one of the biggest areas of investment and growth for a new owner.

Market Outlook / Competition
There are very few bakeries specialized in babkas. The 2 main ones are Loquat and myself. Loquat does not cater, and I've therefore been having a lot of contracts for deliveries of many baked goods.

I compete with regular bakeries too when doing pop-ups, but have observed that the market is huge and customers are impressed by the quality of my baked goods.
Opportunities for Growth
Hiring and partnerships are the main lever for growth: running more events through contractors will increase revenue a lot.
Expanding weekday offerings is a huge lever too. Most of my revenue is captured on weekends. By capturing more revenue on weekdays, the yearly revenue should increase a lot.
Expanding to get more contracts for events (weddings, mitzvahs etc) can be done by working with more event planners. I worked solely with one at the moment, but with limited investment here there is a huge growth potential.
